PERU – Cho Moth Organic
Nestled behind the majestic Cordillera of Central Peru lies the awe-inspiring Yanesha National Park, the ancestral territory of the Yanesha indigenous communities. Decades ago, hybrid cacaos were introduced with the aim of enhancing agricultural production. The regional blend and hybrid cacaos are carefully gathered and undergo an extensive fermentation and drying process at the Cooperative’s post-harvest center. The creation of Cho Moth cacao, meaning hummingbird in the Yanesha language, not only contributes to the increased income of the Yanesha people but also offers chocolate makers a tropical flavour experience highlighted by notes of banana, coconut, and spices.
