INDIA – IDUKKI ORGANIC
In Southern India, the green hills of the Idukki region, famous for its fragrant spices, offer excellent conditions for growing cacao. Abundance in rainfall and sunshine result in cacao beans with a chocolaty aroma, smooth and creamy texture, and rich flavour diversity of spices, raisins and tobacco.

- Flavour: Chocolaty profile with a creamy texture, fresh acidity of green apple, pleasant spicy hints of sea salt, cardamom and black pepper, finishing with an undertone of dried fruits notably dark raisins
- Fermentation: Centrally fermented, 5 days in cascading wooden boxes from Wild Jack timber
- Drying: Sun-dried on tables under open shelter

Supply Chain
100% traceable supply chain up to farm level. Wet beans are bought directly from farmers and processed in a central post-harvesting facility, where they are packed and stuffed in containers.
People
113 farmers benefit from premium prices for their cacao, weekly payments and training. The philosophy is to build committed relationships. Post- harvesting is a women-only managed process.
Forest & Nature
Cacao growing in agroforestry helps to preserve tropical forests and biodiversity. No pesticides and only organic fertilizers are used.
