BRAZIL – BAHIA CABRUCA CUPUAÇU ORGANIC

Theobroma Grandiflorum is a close relative of the Theobroma Cacao. Similar as cacao, this Cupuaçua grows in “Cabruca” forest systems, and beans come from one of the member farmers of  the “Cooperative do Productores Organic do Sul do Bahia”. Cupuaçu goes through a similar post-harvesting process as cacao, where seeds are fermented and dried.

Commercial use is mostly known in Brazil under the name of “cupulate” or a chocolate-like paste called “chocoazú”. The white beans are extremly intersting for culinary creations! Though, since the weight of the outer skin of Theobroma Grandiflorum is higher than cacao, cracking and winnowing can be a true challange. However, once you manage to overcome these challenges, you will be surprised by the joy of flavours that will greet you.
