NICARAGUA – H’WANY ORGANIC

Produced by the COOPESIUNA Cooperative, H’Wany Organic gets its name from the indigenous groups in the Siuna region in Nicarauga. The COOPESIUNA Cooperative’s careful experiments with quality improvement and varieties selection result in a spicy micro-lot cacao with unique and delicate flavours of cuberdon, bubblegum and roasted grains.

  • Fermentation: Central fermentation in horizontal wooden boxes for 5 to 6 days
  • Drying: 48 hours pre-drying under sheets, followed by 8 days sun-drying or in solar tunnels
  • Packaging: 60 kg jute bags
